Seedy Omega Crackers

Seedy omega crackers with beet dip 

(makes around 12): 

  • 2 tbsp chia seeds 

  • 7 tbsp water  

  • 60g ground flaxseeds/linseeds 

  • 60g oats 

  • 1 tbsp apple cider vinegar 

  • 1 tbsp chopped rosemary, finely chopped  

  • 1 tsp garlic powder  

  • 1 tsp chilli flakes  

  • Cracked black pepper  

  • 1 tsp sea salt flakes  

  • 3 tbsp olive oil  

  • 3 tsp honey  

Method:  

  1. Preheat the oven to 180 ΒΊC. 

  2. In a small bowl, mix together the chia seeds and water and allow to sit for at least 10 minutes until the chia seeds have absorbed the water and the mixture has a jelly-like consistency.  

  3. In a separate bowl, mix together the honey, olive oil, garlic, chilli, rosemary, salt, pepper cider vinegar and an extra tbsp of water.  

  4. Into this mix, add in the linseeds, flax seeds, tomatoes, followed by the chia seed mix. Taste for seasoning, adding a little more salt, pepper or chilli to preference.  

  5. Line a baking tray with grease proof paper. Roll small balls of mixture and then press down onto the baking tray into small discs about 1/2cm thick.  

  6. Bake in the oven for 15-20 minutes until golden.  Remove from the oven and leave to cool completely.
