Lemon and Pistachio Energy Balls
100g desiccated coconut, plus extra for decoration
Roughly 250g pitted Medjool dates
1 tbsp maple syrup/honey
Zest of 3 lemons
125g pistachios
Pinch of salt
2 tbsp coconut oil, melted
Blitz all the ingredients in a food processor until the mixture comes together. If the mixture is too wet, add a little more coconut, if too dry add a tiny bit of water, it should still be a little sticky as it will firm up when chilled.
Roll into around 12 small balls and roll into more coconut. Refrigerate until serving.β―
Can be frozen for up to 3 months, perfect for an on-the-go snack.
