Lemon and Pistachio Energy Balls

  • 100g desiccated coconut, plus extra for decoration 

  • Roughly 250g pitted Medjool dates 

  • 1 tbsp maple syrup/honey  

  • Zest of 3 lemons 

  • 125g pistachios  

  • Pinch of salt 

  • 2 tbsp coconut oil, melted 

  1. Blitz all the ingredients in a food processor until the mixture comes together. If the mixture is too wet, add a little more coconut, if too dry add a tiny bit of water, it should still be a little sticky as it will firm up when chilled.  

  2. Roll into around 12 small balls and roll into more coconut. Refrigerate until serving.β€― 

  3. Can be frozen for up to 3 months, perfect for an on-the-go snack.
