Cheesy Corn Fritters
Serves 2
125g sweetcorn
2 tsp. Self raising flour
2 eggs
Salt and pepper
15g parmesan, grated
3 spring onions, finely sliced
1 avocado
Juice of half a lemon
Optional extras:
Streaky bacon
Halloumi
Poached eggs
Tomato
In a bowl, whisk the flour into the eggs until smooth.
Mix in the sweetcorn, parmesan, 2 of the spring onions and some salt and pepper.
Set a large non-stick pan on medium to high heat and add a drizzle of oil.
Dollop spoonfuls of the mixture into the pan and cook for a minute or so on each side until golden.
Smash the avocado with a squeeze of lemon, salt and pepper.
Serve the fritters warm with the smashed avocado and any extras you fancy!
