Cheesy Corn Fritters

Serves 2

  • 125g sweetcorn 

  • 2 tsp. Self raising flour 

  • 2 eggs 

  • Salt and pepper 

  • 15g parmesan, grated 

  • 3 spring onions, finely sliced  

  • 1 avocado 

  • Juice of half a lemon

Optional extras:

Streaky bacon 

Halloumi 

Poached eggs 

Tomato 

  1. In a bowl, whisk the flour into the eggs until smooth.

  2. Mix in the sweetcorn, parmesan, 2 of the spring onions and some salt and pepper.

  3. Set a large non-stick pan on medium to high heat and add a drizzle of oil. 

  4. Dollop spoonfuls of the mixture into the pan and cook for a minute or so on each side until golden. 

  5. Smash the avocado with a squeeze of lemon, salt and pepper. 

  6. Serve the fritters warm with the smashed avocado and any extras you fancy!
