Strawberry balsamic salad

100g cherry tomatoes, halved
8-10 large strawberries, quarter or halved 6 pecans, roughly chopped
Half a cucumber, seeds removed and sliced 1 1/2 tbsp olive oil
Juice of half a lemon
1 tbsp thick balsamic
1 tsp honey/ sugar
Plenty of salt and pepper
Handful of mint or basil, sliced

  • Arrange all the ingredients in a bowl and mix well.

  • Leave for at least 15 minutes at room temperature before serving

  • Delicious with chicken, fish or creamy cheese.
