Quick Kimchi pancakes
2 eggs
3 tbsp @yumchikimchi kimchi
3 tbsp gram four / or any flour
1 tsp baking powder
Large handful of chopped coriander
1 shallot, finely diced
Fresh chilli (if you want it a little more spicy)
Plenty of s+p
Method:
Mix all the ingredients together in a large bowl, ensuring all the flour is combined. Taste and adjust seasoning / spice if needed.
Heat a non-stick pan on medium to high heat. Add some sesame or coconut oil.
When the pan is hot, fry dollops of the batter in sesame oil for a minute or so before flipping. Repeat for all of the batter.
Serve with salad, more kimchi, fried eggs or tofu! Delish!
