Peas on Toast

Serves 2

  • 200g frozen peas (or a mixture of peas and chickpeas/butterbeans)

  • 1 small glove garlic, grated

  • 1 tbsp extra virgin olive oil

  • 1/2 tsp ground cumin

  • 2-3 tbsp finely chopped fresh herbs (basil, mint, parsley, chives, dill all work well - whatever you have available)

  • Juice and zest of 1 lemon

  • Plenty of salt and pepper

  • 2-4 slices of your favourite bread (depending on how hungry you are)

Additional extras:

  • Crumbled feta

  • Crispy bacon

  • Eggs your way

  • Chilli flakes

  • Toasted nuts and seeds

  • Dukkah spice mix

Method: 

  1. Allow the peas to defrost completely, or lightly steam until tender.

  2. In a food processor, combine the peas (and chickpeas if using), garlic, salt and pepper, oil and lemon - blitz into a rough mash.

  3. Transfer into a bowl and add the fresh herbs - reserving some for a garnish.

  4. Taste for seasoning, adding more salt, pepper and lemon if needed.

  5. Toast your bread and begin cooking any of your additional extras.

  6. Plate up - load up your toast with a generous mound of smashed pea mix, lots of fresh herbs, your choice of extras and maybe a final drizzle of olive oil.
