Chickpea smash
1 tin chickpeas, drained, washed and dried (higher quality makes a difference - I love the giant chickpeas that come in a jar and are much plumper)
2-3tbsp tbsp olive oil
Almonds, roughly chopped
2 large handfuls fresh parsley / dill/ coriander /mint
¼-1/2 red onion (or spring onions)
Squeeze of lemon or apple cider vinegar (approx 1-2 tbsp)
1 tsp of honey
Salt and pepper
2 tbsp dukkah spice (more if you like)
Any veg chopped! (cucumber, carrot, cherry toms, pepper etc)
Handful of cress / rocket
Start by lightly smashing the chickpeas in a large bowl with a fork -leaving around half still whole.
Add the remaining ingredients, taste and season well. Add more lemon/vinegar or honey if needed
Best served straight away, try with grilled meat, fish or halloumi. A great BBQ side salad!
